It's good to be able to have an occasional pancake again!
1) I was amazed at how full I felt---did not feel like eating until well after lunchtime, all this for only 270 calories!--- but then the next morning, when I was pouring in the olive oil I realized that the olive oil alone was 270 calories!--this, plus the coconut milk and the mix probably added up to as many calories as a pint of Chocolate Therapy Ice Cream (not AIP, but still...)
So, the next day I cut the recipe in 1/3 and added a few slices of fresh strawberries, had one (large) pancake --it was very good
2) I notice one commenter said that in spite of the AIP goal, she had stomach cramps. I did notice that too--- was wondering what I had eaten, decided to skip this for a while.
