    Not a fan

    These were my first AIP pancakes but I didn't really like them. I think it's the tigernut was too prominent. I decided to try TrulyAIP's mix and do like it much better. The AIPeazy bag is still in the pantry. I'm trying to figure how to use it somewhere.

    AIPeazy Waffle & Pancake Mix

    Love this waffle & pancake mix. Have only made waffles so far but love how nice and crispy brown they get with a taste that does not disappoint.

    Not a fan

    Sux. They are rough and not fluffy at all. Worse than buckwheat. I even tried making them with more coconut milk and fruit. If you like scones, you will like these pancakes. N

    AIP pancakes

    It's good to be able to have an occasional pancake again! 2 cautions: 1) I was amazed at how full I felt---did not feel like eating until well after lunchtime, all this for only 270 calories!--- but then the next morning, when I was pouring in the olive oil I realized that the olive oil alone was 270 calories!--this, plus the coconut milk and the mix probably added up to as many calories as a pint of Chocolate Therapy Ice Cream (not AIP, but still...) So, the next day I cut the recipe in 1/3 and added a few slices of fresh strawberries, had one (large) pancake --it was very good 2) I notice one commenter said that in spite of the AIP goal, she had stomach cramps. I did notice that too--- was wondering what I had eaten, decided to skip this for a while.

    I was worried about this one because I'm avoiding oil do instead of coconut milk and oil for the batter I just used more coconut milk and it still came out great! Very impressed and it's much easier(and came out better) then me measuring everything out myself.

    AIP waffle mix

    Not bad in a pinch. I make a homemade version of this, but I wanted to have something easier in case I am not feeling great. I needed to add 1/4 cup applesauce to get the waffles to brown and hold together. I made the whole bag at once and then froze the waffles.

    Makes better pancakes than waffles

    This makes delicious pancakes, but it ruined by waffle maker! Proceed with caution if you are going to make waffles. I put it on medium heat for the minimum amount of time the bag recommended, and when I opened my waffle maker, it split apart and I could not get the mix off the waffle maker. It was crusted on solid.

    Worth the Splurge

    These were well worth the price, but don't expect them to taste like traditional pancakes. They are more savory and nutty in flavor. As pancakes, they were nice with my breakfast with added maple syrup. However, I found the leftovers made great "bread" for a meat & greens mini-sandwich for lunch!
