    Near Perfection

    When I was a kid, my mom made taco salad for things like church picnics or family reunions. Lettuce, seasoned meat, cheese, onion, kidney beans, tomatoes, Fritos, and Catalina dressing. The memory of those salads is a strong and happy one, and one that I repeated many times as an adult.
    I thought I'd never have anything even reasonably close once I discovered my nightshade sensitivity. But this bottle rocked my world! No, it's not Catalina. But it's so close that my non-AIP family members eat it without complaint or comment. Taco salads have come back to my life! AIP taco seasoning, ground beef, mix of greens, green onion, and this dressing is all I really need. And during elimination, I'd bake up some Cassava flatbread with garlic oil to use as chips. I now use Siete Cassava Tortilla chips, in lime or plain.
    The dressings is a little thicker and has a slightly different texture from the corn syrup and tomato version by Kraft. But on flavor, it cannot be beaten. There's not another AIP product that so closely mimics a standard like this one!

    I didn't realize it was an oil-free dressing, that that's what made it so disappointing. The ingredients are disclosed in the listing, but I guess I didn't pay attention. So I just added olive oil when I used it. The dressing is okay - nice to have a flavor other than oil and vinegar, but it's nothing spectacular. And it's a little lumpy - it doesn't pour smoothly like an oily dressing. Also has a spicy kick to it that isn't bad. I will use it, but I wouldn't repurchase it. I love KC's other products, but this one is a miss for me.
